Ingredients

• 1 large eggplant (baigan)

• 2 chopped tomatoes

• 1 finely chopped onion

• 4–5 garlic cloves and 2 green chilies

• 2 tablespoons mustard oil or cooking oil

• ½ teaspoon cumin seeds

• Salt, red chili powder, and turmeric to taste

• Fresh coriander leaves

Instructions

1. Roast: Coat the eggplant with oil. Roast it on a gas stove flame until the skin is charred and the inside is soft. Let it cool, then peel off the skin and mash the flesh.

2. Sauté: Heat oil in a pan. Add cumin seeds, chopped garlic, and onions. Cook until the onions turn light brown.

3. Spice: Add chopped tomatoes, turmeric, red chili powder, and salt. Cook until oil separates from the mix.

4. Combine: Add the mashed eggplant to the pan. Stir and cook on low heat for 4 to 5 minutes.

5.Garnish: Mix in fresh coriander leaves and serve hot with roti.

NOW NOW NOW! Some people might ask me what is roti, and truly WHAT IS A ROTI?

To answer your curiosities, a roti is like a pan cake, made of a different flour, cooked in a different method, used just unlike a pancake and unlayered. Though, you might find some uncultured psychopaths having it with honey and chillies (Def not me).

So anyway kneed a dough of wheat flour, turn your burner on low heat.
