Today's recipe is a very simple pasta with minced meat and tomato paste. Never be afraid that you don't have anything to cook with, with just a handful of ingredienta you can easily make a simple filling and tasty dish to energize for long Warera sessions:

Ingredients

500 gr Farfalle (Bowtie Pasta)

400 gr minced meat

2 medium-large dry onions, finely diced

3 tablespoons of tomato paste

4 Tablespoons of Olive Oil

Spices & Seasoning:

1 teaspoon granuled garlic

1 teaspoon pepper

2 teaspoon chili flakes

1.5 tablespoon dried mint

Instructions

1- Brown the meat (7 minutes)

Heat olive oil in a deep pan over med-high heat. Add all minced meat and black pepper. Cook until trapped moisture is evaporating and the meat begins to sizzle and brown wholly.

In a separate pot, heat water until boiling point, add salt liberally.

2- Soften the onions (5 minutes)

Set the heat to medium. Add the diced onions to the pan, mix in with meat, wait until translucent.

Once the saltwater boils, add in all the pasta.

3- Bloom the tomato paste (4 minutes) add in thr tomato paste to the meat n onions by initially oprning a spot in thr middle. After a minute, stir to mix.

4- Once the pasta boils al dente (still a little stiff but eatable) store 1 cup of salty pasta water and then strain the remaining pasta with a strainer, put back to rhe pot with a tablespoon of olive oil to prevent sticking. Leave to rest until sauce is ready.

5- Emulsify and season (4 minutes)

Pour the pasta water into meat pan. Then immediately add in the remaining seasoning. Stir thoroughly and let it simmer for 3 minutes.

6- Combine and serve (5 minutes)

Dump all the sauce into the pasta pot. Stir over low heat for 5 minutes to finalize cooking. Optionally prepare a topping with greek yogurt, dried mint and granuled garlic. Voila, ready for eating.

Golden Tip: Never skip the pasta water.The starch emulsifies the fats, oil and tomato paste into a glossy sauce that embraces the pasta.
