Hyderabadi biryani is one of India's most famous rice dishes, known for its fragrant basmati rice, aromatic spices and tender meat. It developed in Hyderabad during the era of the Nizams, whose royal kitchens helped establish the city's distinctive culinary traditions.

The Traditional Cooking Method
Hyderabadi biryani is traditionally prepared using the dum method, in which rice and meat are cooked together in a sealed pot over low heat. The pot traps steam inside, allowing the ingredients to cook slowly while the spices and aromas blend together. Two common versions are kachchi biryani, made with raw marinated meat, and pakki biryani, made with meat that has been cooked before layering.
A Signature of Hyderabad
The dish is commonly prepared with basmati rice, meat, yoghurt, saffron, mint, fried onions and a blend of spices. Over time, Hyderabadi biryani became a defining part of the city's food culture and spread to restaurants across India and beyond.
Today, Hyderabadi biryani is enjoyed around the world, with its distinctive aroma, layered flavours and traditional dum cooking method making it one of India's best-known regional dishes.
