As a human of taste i find that it is for me to state this point strongly and confidently!
Gouda was never that interesting, they try to advertise it as it is the edgy English cheddar yet by the first bite become the cheddar with the dissapointment of a young child losing their lollipop.
What is interesting is the deep, caramelized, enticing feeling of having the Norwegian cheese Brunost. I, a human, get hopeful of our neighbours every time i have it. Its like seeing an old friend you have not speaken to in a while do well.
I for one, as a human, support the shift in the regions cheese politics and hope it will get aged well (good cheese ages well).
